3 Ingredient Chocolate Protein Cookies

For Day 2 of 30 Healthy-ish Desserts let's satisfy your late-night cravings with these 3-Ingredient Chocolate Protein Cookies made from Quest Protein Bars! Baked to perfection and dipped in silky chocolate, they’re the perfect midnight treat of indulgence without the guilt!

3 Ingredient Chocolate Protein Cookies

Yield: 6 mini cookies
Prep Time: 3 minutes
Cook Time: 7-10 minutes
Total Time: 10-13 minutes

Ingredients & Utensils

1 Knife 

1 Microwave-safe Bowl 

1 Baking Tray lined with parchment paper or grease 

1 Fork or Spoon (for dipping in melted chocolate)

 

1 Quest Protein Bar in Cookie Dough or Cookies & Cream (your choice of flavour!)

1/4 cup (85g) Milk Chocolate Chips 

1/2 teaspoon (2.84g) Coconut Oil or Extra Virgin Olive Oil 


Let's Get Baking!

1. Cut the Quest Protein Bar into 6 bite size rectangular pieces. 


2. Add to baking tray lined in parchment paper or grease.


3. Bake in oven for 325F (162C) for 7-10 minutes and until the bottom is golden-brown in colour. Take out of oven and allow it to cool down.


CTD Baking Tip: See the below Notes section for the Airfryer details!  


4. In the meantime, melt the milk chocolate in the microwave for maximum 30 seconds (mixing at 10-15 second intervals to prevent burning) using coconut oil or extra virgin olive oil. Alternatively, you can also use the double-boiler method. 


CTD Baking Tip: The coconut oil and extra virgin olive oil helps the melted chocolate be less viscous. 


5. Once the baked protein cookies are cool to the touch, dip each in melted chocolate with a fork or spoon and place in tupperware or glass container lined with parchment paper. 


CTD Baking Tip: Parchment paper is perfect to prevent the chocolate pieces from sticking together.


6. Place in fridge until the melted chocolate hardens.

Notes

1. Storage: this can be stored in a tupperware or glass container in the fridge for up to one week or freezer for up to 1 month. 


2. Airfryer Instructions: These cookies can also be baked in the Airfryer at 325F for 10-15 minutes!
