Chocolate Pecan Biscoff Brittle (aka Biscuit Cake)

This rich and crunchy Chocolate Pecan Biscoff Brittle (aka Biscuit Cake) combines the sweetness of milk chocolate, the nuttiness of pecans, and the irresistible flavor of Lotus Biscoff. A perfect guilt-free treat, itโ€™s easy to make and satisfies those sweet cravings. This is day 5 of 30 Healthy-ish Dessert series where we balance indulgence with wholesome ingredients!

Chocolate Pecan Biscoff Brittle (aka Biscuit Cake)

Yield: 12 pieces of brittle or biscuit cake
Prep Time: 10 minutes
Cook Time: 0 minutes
Total Time: 10 minutes

Ingredients & Utensils

1 Mixing Bowl

1 spoon or spatula 

1 Microwave-safe bowl

Knife 

Tupperware lined with Parchment Paper 


1 cup Milk Chocolate 

1/2 cup Pecans

1/2 cup Lotus Biscoff Cookies 

1 teaspoon Extra Virgin Olive Oil or Coconut Oil  

 


Let's Get Cooking

1. Melt the milk chocolate with Extra Virgin Olive Oil or Coconut Oil in the microwave for 45 seconds. Stirring at increments of 15 second to prevent burning. You can also use the double boiler method. 


2. Add the melted milk chocolate into a mixing bowl, along with the pecans and crushed Lotus Biscoff. You can simply crush them with your fingers. 


3. Combine and pour into a parchment lined tupperware or container. Pressing it down with your spoon or spatula. Pop this in the freezer for 30 minutes!


4. Cut into bite size pieces and enjoy!


Enjoy your homemade Chocolate Pecan Biscoff Brittle or Biscuit Cake as a mid-afternoon sweet treat or even as a guilt free midnight dessert.

Notes

1. Storage: Store in tupperware or glass container in the fridge for up to one week. 


2. Variations: Get creative and even get your kids involved in making this recipe! If you are allergic to Pecans, easily swap with Sunflower Seed or even Toasted Quinoa!
