Dubai Kunafa Chocolate Stuffed Dates

Day 1 of 30 Healthy-ish Dessert series kicks off with these indulgent Dubai Chocolate-Stuffed Dates! Inspired by the viral Dubai Chocolate Bar, they're packed with crunchy kunafa, creamy pistachio, and a tahini drizzle for the perfect blend of flavor and texture. Dubai Kunafa Chocolate Stuffed Dates

Yield: 6 stuffed dates
Prep Time: 7 minutes
Cook Time: 3 minutes (optional)
Total Time: 7-10 minutes

Ingredients & Utensils

1 Microwave Safe Bowl (for melted chocolate chips)

1 Knife (disregard if using de-pitted medjooled dates)

Tupperware lined with parchment paper 

small cooking pan (optional)

cooking ladel (optional)


6 Medjooled Dates

6 teaspoons (34.14g) Pistachio Cream 

10-12 Whole Unsalted Cashew (or substitue with Kunafa)  

1 teaspoon (5g) Ghee (optional)

6 teaspoons (34.14g) Tahini 

1/4 cup (85g) Milk Chocolate Chips 

Let's Get Cooking

1. Remove the pits from the Medjooled Dates. If using pre-pitted dates, you can skip this step.


2. Make a slit in each Medjool date. Using a knife, carefully cut a slit down the middle of each date without cutting all the way through. Use your fingers to gently create a small pocket in each one. 


3. Fill each date with Pistachio Cream. Slather about a teaspoon of pistachio cream into the pocket of each Medjool date.


4. If using Cashews: Toast the whole Cashews in a non-stick cooking pan along with one teaspoon of Ghee. Once toasted, add 1-2 whole Cashews in the center of each Medjooled Date.


or, 


If using Kunafa: Toast the Kunafa in a non-stick cooking pan with one teaspoon of Ghee. Once toasted, add one teaspoon into the center of each Medjooled Date. 


Alternatively: You can skip the ghee and the toasting and simply add Whole Cashews to the center of each date. The choice is yours! 


5. Drizzle about a teaspoon of tahini over each stuffed date. Place the dates in a Tupperware or glass container and freeze them until the tahini hardens.


6. Melt milk chocolate chips in the microwave for no more than 30 seconds, using either coconut oil or extra virgin olive oil to help the melted milk chocolate be less viscous. Alternatively, you can use the double-boiler method to melt the chocolate.


7. Dunk each stuffed date in the melted chocolate, then return them to the container. Chill in the fridge until the chocolate hardens.

Notes

1. Storage: This recipe can be stored in a Tupperware or Glass Container in the fridge for up to 1 week. (Might not last that long!)
