Dump & Shake Salad w. Chickpea Croutons

Yield: 4 individual portions

Cook Time: 30-40 minutes
Total Time: 40-50 minutes

Ingredients & Utensils

Utensils for Dump & Shake Salad 

2 (16oz) Deli Container with Lids (or 2 large tupperwares with a lid) 


Ingredients for Dump & Shake Salad 

1 Storebought Ready Made Salad Kits (any brand is fine, but it should come already with salad dressing)

1 Yellow Capsicums aka Bell Peppers, diced 

1 handful Cherry Tomatoes, halved 

2 tablespoons Everything But the Bagel Seasoning (equal parts of poppy seeds, dried garlic, black and white sesame seeds, dried onion and salt)  


Utensils for Chickpea Croutons 

Oven or Airfryer  

Baking Tray, lined with Aluminum Foil or Baking-friendly Parchment Paper

Mesh Strainer 


Ingredients for Chickpea Croutons 

1 can of Chickpeas or Garbanzo Beans 

1 tablespoon Sunflower Oil (sub with Avocado Oil or any high smoke point oil) 

1 teaspoon Garlic Powder 

1 teaspoon Onion Powder 

1 teaspoon Tandoori Masala (sub with Smoked Paprika) 

1 teaspoon Garam Masala (sub with All Spice) 

1 teasooon Texmex Spice Mix 

1 teaspoon Turmeric Powder

Crushed Black Pepper 

Salt 

Let's Get Cooking!

Chickpea Croutons 


1. Dump a can of chickpeas into a mesh strainer right above the sink. Thoroughly rinse under colder water using one hand to gently toss the white chickpeas in the water. This prevents any of the gas-like properties from happening once they are consumed. iykyk 🙊💨


2. Once rinsed, place on a baking tray lined with aluminium foil or baking-friendly parchment paper. Add the ingredients one at a time: Sunflower Oil, garlic powder, onion powder, tandoori masala, garam masala, texmex spice mix, turmeric, crush of black pepper and 1-2 pinches of salt. 


3. Toss the ingredients together either with your clean hands, ladle, or spoon. 


Baking Chickpeas in the Oven:


4.  Preheat oven to 400F (200C). Bake in oven for 30-40 minutes, and toss the chickpeas at the halfway point.  


Baking Chickpeas in the Airfryer:


5. Airfry at 375F (190C) for 12-15 minutes. Toss the chickpeas at the halfway point. 


Assemble Your Dump & Shake Salad: 


6. Divide the storebought salad kit into two tupperware containers, and any sachets that come inside the salad kit. Divide the remaining ingredients into the two tupperware containers: bell peppers, cherry tomatoes and Everything but the Bagel seasoning. Finally, add your homemade Chickpea Croutons. 


7. Close the container with the lid and now...SHAKE, SHAKE & SHAKE! 🕺🏻💃🏻


8. Uncover and enjoy your homemade Dump & Shake Salad with Chickpea Croutons straight from the Tupperware—because who needs more dishes?!

Notes

1. Variations: This dump and shake salad is very foregiving so add whatever veggies and protein you want to build flavour! Hard boiled eggs, paneer, tofu, sugar snap peas, carrots - the list can go on and on!
