Gulab Jamun Cheesecake Stuffed Dates

HAPPY DIWALI!! 🎆 Celebrate today with Day 10 of 30 Healthy-ish Desserts series: Gulab Jamun Cheesecake Stuffed Dates. This fusion dessert combines two of my personal favorites—cheesecake and Gulab Jamun—into a deliciously creamy, saffron-infused treat, perfect for the festive season. Light, indulgent, and easy to share, it’s a Diwali delight!🪔✨
Gulab Jamun Cheesecake Stuffed Dates

Ingredients & Utensils
Ingredients for Cheesecake "Base"
9 whole (140g) Medjool dates
3 pieces (90g) Gulab Jamuns from a can (i used store bought)
Ingredients for Saffron Cardamom Cheesecake Filling
1 cup (225g) Philadelphia Cream Cheese
2 tablespoons (30g) Greek Yogurt
1/2 cup (100g) Granulated Sugar
3-4 whole Cardamom Pods, crushed (see notes for alternative!)
1 pinch Saffron threads, crushed
1 teaspoon (5ml) Vanilla
Ingredients for Cheesecake Topping
1/4 cup (60ml) Gulab Jamun syrup
6 whole (75g) Graham Crackers, crushed
1/4 cup (30g) Pistachio, crushed (optional)
Utensils
Knife
Serving Plate
Mixing bowl and mixing spatula
Extra teaspoon for scooping cheesecake filling into dates
Extra bowl for reserved Gulab Jamun syrup
Extra plate or bowl for crushed toppings
Let's Get Cooking
1. Prepare the Cheesecake Topping by reserving some of the Gulab Jamun syrup in a bowl and crushing Graham Crackers and Pistachios into small crumbs.
CTD Tip: I crushed mine in a plastic bag using my hands, you can also use a rolling pin! This is a fun way to involve toddlers, your s/o and friends!
2. Prepare the Saffron Cardamom Cheesecake filling by combining all ingredients into a mixing bowl. Nicely mix with a spatula.
3. Prepare the Cheesecake "Base" by depitting all your Mejool dates, and slicing the Gulab Jamun into quarters.
4. Assemble by first adding your sliced Gulab Jamun, then add 1 teaspoon of the Saffrom Cardamom Cheesecake filling, and drizzle 1 teaspoon of the reserved Gulab Jamun syrup. Lastly, sprinkle crushed Graham Crackers and Pistachios. Repeat this for all stuffed dates.
Place on a serving platter and enjoy your homemade and healthy-ish Gulab Jamun Cheesecake Stuffed Dates for Diwali (or any time of the year!)
Notes
1. Storage: Store in a glass container/tupperware using parchment paper between each layer to prevent sticking from one another. This can be made freashly and stored in the fridge for up to 1 week or made in advance and stored in the fridge for up to 2 weeks.
2. Alternative: Replace cardamom pods with store bought cardamom powder!
