Pumpkin Yogurt Parfait

This creamy Pumpkin Yogurt Parfait topped with warm, spiced stewed apples is the perfect cozy treat for fall! Lightly sweetened with maple syrup and packed with seasonal flavors, itโs a deliciously wholesome dessert you can enjoy any day of the week. This is our Day 11 of 30 Healthy-ish Desserts series!
Pumpkin Yogurt Parfait
Yields: 2 serving cups of parfait

Ingredients & Utensils
Ingredients for Pumpkin Yogurt
1 cup Pumpkin Puree
2 cups Greek Yogurt
2 tablespoons Maple Syrup (see below Notes for alternatives)
Utensils for Pumpkin Yogurt
Mixing Bowl
Mixing Spatula or Spoon
Ingredients for Stewed Apples Parfait Topping
1 Apple, diced
3 tablespoons of Water
1 teaspoon Lemon Juice
1 teaspoon Pumpkin Spice Seasoning Mix (see below Notes for alternative)
1 handful of Dried Cranberries
1 handful of Dried Raisins
Utensils for Stewed Apples Parfait Topping (see below Notes for microwave directions)
Cooking Pot
Cooking Ladel or Spoon
Stovetop
Let's Get Cooking
Pumpkin Yogurt
1. Combine all the ingredients into a mixing bowl and mix until everything is well incorporated with a spoon or spatula.
Stewed Apples Parfait Topping (see below Notes for microwave directions)
2. Add all ingredients one by one into a cooking pot, in a medium stovetop setting. Cook all the ingredients for 3-5 minutes, stirring frequently - this will help the ingredients marry one another and until the apples are soft.
3. When the apples have soften and you're able to easily break apart an apple piece with your cooking ladel or spatula, turn the stovetop off and set it aside to cool down.
4. Serve your homemade Pumpkin Yogurt Parfait by first topping your serving cups with a generous scoop of the Pumpkin Yogurt. Next, ladel on top your homemade Stewed Apples Parfait Topping!
This recipe is so comforting, warm and evokes all the coziness to enjoy throughout the colder Fall and Winter seasons!
Notes
1. Storage: Store the Pumpkin Yogurt and Stewed Apples Parfait Topping in two separate airtight containers to keep the textures of each intact and in the fridge for up to 1 week. When storing the Stewed Apples, ensure it is completely cooled down before placing it in the fridge for storage.
2. Alternatives:
a) Instead of Maple Syrup, you can also use Honey, Date Syrup, Agave or a sweetner of your dietary preference.
b) Homemade Pumpkin Spice Seasoning is a mixture of Cinnamon, Nutmeg, Clove and Ginger powder. If you have all four individual spices, simply combine 1 tablespoon of each into a mason jar, shake well and add the needed measurement into your recipe!
c) Instead of Pumpkin Spice Seasoning, you can use just Cinnamon!
3. Microwaveable Stewed Apples Parfait Topping:
Dump all ingredients into a microwavable bowl. Place in the microwave for 3 to 5 minutes stirring every 30-40 seconds to prevent it from burning. Once the apples have soften and you're able to easily cut through it with a spoon - it is ready to be devoured! So simple and delicious!
