Summer Sunshine Oatmeal

A simple and one pot, stove-top morning oatmeal recipe with delicious raspberries, thinly sliced green apples and a heavy dollop of organic peanut butter to rekindle any summertime memories!


Psst... this can be made in the microwave, as well - no judgment here!

Summer Sunshine Oatmeal

Yield: 1 bowl of oatmeal
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Ingredients & Utensils

1 Regular-sized cereal bowl

1 cooking pot with lid

1 ladel 

1/2 cup Quaker Old Fashion Rolled Oats

1 and 1/2 cup Milk

1/2 a Green Apple, roughly chopped and diced into small wedges

1 or 2 handful(s) of fresh or frozen Raspberries

1/2 teaspoon Cinnamon (optional)


Toppings

1 teaspoon Raw Honey, drizzled overtop 

1 tablespoon Natural Peanut Butter

1/2 teaspoon Chia Seeds

1/2 teaspoon Ground Flax Seeds

6 almonds, roughly chopped (optional)

6 walnuts, roughly chopped (optional)


Let's Get Cooking!

1. Place a cooking pot on your stove-top with the Rolled Oats and your preferred choice of Milk. Turn on the stove-top to a medium-low heat and stir the mixture for another 30 seconds.


2.  Once stirred, add the Green Apples, and fresh/frozen Raspberries. This recipe is very versatile, so if you don't have Raspberries substitute with any berry and apple! Stir and combine the fruits with the Rolled Oats and Milk, for another 1 minute. 


3. If you find that your Rolled Oats are getting a bit clumpy, you can add another 1/2 cup of Milk. However, if it is to your preferred consistency then add the Cinnamon and 1/2 of the roughly chopped Almonds and Walnuts. Mix all the ingredients together. 


4. At this point cover your cooking pot with a lid, increase the stove-top temperature to a medium and let this mixture cook for another 1 minute. Take off the lid, with your cooking ladle mash the Apple and Raspberries to allow for its natural sweetness to come out. Mix all the ingredients together.  


5. Pour your delicious and wholesome pot of oatmeal into your cereal bowl. Now comes the fun part...the toppings! *wide grin*


6. Drizzle on a teaspoon or two of Raw Organic Honey, dollop a huge tablespoon of Natural Peanut butter, sprinkle half a teaspoon of chia seeds and ground flax seeds; as well as, the remaining chopped Almonds and Walnuts. 


7. Taste your homecooked Summer Sunshine Oatmeal!

Notes

1. Substitute any of the ingredients to your dietary preferences.


2. The secret to good oatmeal is substituting water with your preferred choice of milk. This makes the oatmeal creamier and a breakfast that can last you until lunch. 


3. This Summer Sunshine Oatmeal recipe is perfect with any type of Apple and Berry. 


4. The Almonds and Walnuts add a crunch; however, this is an optional ingredient. You can substitute this for Sunflower seeds, as well! 


5. Microwave Variation: If you are using a Microwave, put the Rolled Oats, your choice of Milk, Apple and Raspberry into your cereal bowl. Place in the Microwave, and let it cook for 2 minutes. Carefully take it out of the Microwave, give it a mix with a spoon. At this point, if you find that your Rolled Oats are a bit clumpy add another 1/2 cup of Milk. Stir the mixture with a spoon. Now add the Cinnamon, half of the chopped Almonds and Walnuts; as well as, the rest of the toppings. Drizzle on a teaspoon of the Raw Organic Honey, a tablespoon of Natural Peanut Butter, sprinkle half a teaspoon of chia and flax seeds; as well as, the remaining chopped Almonds and Walnuts!
