Apple PB Clusters

Day 12 of 30 of my Healthy-ish Desserts is my Apple Clusters made with diced apples, peanut butter, topped with more peanuts and a drizzle of silky melted chocolate. The perfect guilt-free indulgence you gotta make!

Apple PB Clusters

Yields: 12-15 small clusters
Prep: 10 minutes + 30 minutes for freeze time

Ingredients and Utensils

Ingredients for Apple PB Clusters

2-3 Diced Apples 

Chocolate Pudding Base from Day 3 of 30 

1 handfull Raw Unsalted Peanuts 

1 tablespoon Unsweetened Peanut Butter (optional - you can also use the regular sweetend kind if that's all you have!)

1/4 cup Milk Chocolate Chips 

1 teaspoon Coconut Oil



Utensils for Apple PB Clusters 

Mixing Bowl and Spatula 

Extra Spoons (melted chocolate and melted peanut butter) 

Baking Tray or Tupperware linned with parchment paper or grease 

Freezer 

Let's Get Cooking

1. Combine Diced Apples and Chocolate Pudding Base into a mixing bowl. Mix with spatula until well combined.


2. Scoop a tablespoon of the cluster onto a baking tray or tupperware linned with parchment paper or grease. This will prevent the clusters from sticking to the surface. Pop in the freezer for 15 minutes!


3. Remove from the freezer, melt Peanut Butter in the microwave for 20 seconds, stirring in between to prevent burning. Drizzle a layer of peanut butter on each apple cluster.


4. Prepare melted chocolate in a microwave with Coconut Oil for 30 seconds, stirring in between to prevent burning. Or you can use the double-boiler method. Drizzle a layer of melted chocolate. Pop in the freezer for another 15 minutes!


You made the perfect Apple PB Clusters a well balanced dessert to satisfy those sweet-tooth cravings and with a nutty crunch from the peanuts! Enjoy!

Notes

1. Storage: Store in a glass container/tupperware and in the fridge for up to 1 week. Make ahead and store in freezer for up to 1 month. When removing from freezer simple let it thaw slightly then eat!
