Chocolate Hard Shell Pudding

Day 3 of my 30 Days of Healthy-ish Desserts series, let's indulge in this rich Chocolate Hard Shell Pudding, a guilt-free treat that's creamy, chocolatey, and oh-so-satisfying! Made with Greek yogurt, cocoa, and a hard shell milk chocolate topping, it's a delicious way to curb those dessert cravings! 🍫✨


The chocolate pudding base is extremely customizable based on your health goals.

Ingredients & Utensils

Ingredients & Utensils for Chocolate Pudding 

1 mixing bowl 

1 mixing spatula

2 serving glass jars 


1 cup (250g) Greek Yogurt 

1 teaspoons (5.6g) Unsweetened Cocoa Powder  

2 tablespoons (30g) Maple Syrup 

1 handful Milk Chocolate Chips (optional - adds an extra bite of texture to the pudding)


Ingredients & Utensils for Chocolate Hard Shell 

1 microwave safe bowl 

1 mixing spoon 


1/4 cup (85g) Milk Chocolate Chips 

1/2 teaspoon (2.8g) Extra Virgin Olive Oil or Coconut Oil 


Let's Get Cooking

Chocolate Pudding 


1. Combine greek yogurt, unsweetened cocoa powder, and maple syrup into a mixing bowl, until smooth pudding-like consistency. This is your "chocolate pudding" base.


CTD Tip: For this recipe, stick to greek yogurt as opposed to dahi or regular store-bought yogurt. 


2. Add the milk chocolate chips and gently fold into the chocolate pudding. 


3. Scoop into individual glass jars, mini mason jars or even repurposed jars would also work. 


CTD Tip: I re-used two tiramisu glass jars from Costco! 


4. Smooth the top with a spatula, then gently tap the jars on the surface to remove any air pockets. Chill in fridge for 30 - 60 minutes. 


Chocolate Hard Shell 


5. Melt milk chocolate chips with coconut oil or extra virgin olive oil in the microwave for 30 seconds, stirring in 10-15 seconds intervals to prevent burning. You can also use the double-boiler method.

6. Take the chilled chocolate pudding out of the fridge. Drizzle a thin layer of melted milk chocolate over the chilled pudding and smooth with the back of the spoon.


7. Place the chocolate hard shell pudding back in the fridge to chill overnight for at least 8 hours. 


The next day, you have yourself the perfect chocolatey treat to enjoy guilt-free!🍫😍

Notes

1. Storage: These chocolate pudding store extremely well in the fridge for up to 1 week, or the freezer for 1 month. If storing in freezer, remember to thaw in fridge for at least 1 hour before serving. 


2. Variations: The chocolate pudding base (ie. greek yogurt, cocoa powder, maple syrup and chocolate chips) is a versatile recipe that let's you customize based on your preferences. 


Swap out the milk chocolate chips for any nuts, seeds, or dried fruit of your choice! 


If you want some extra protein, swap out the cocoa powder with your go-to chocolate protein powder! 


3. Unsweetened Cocoa Powder: I used unsweetened cocoa powder in this recipe. If you are not used to the natural bitter taste you can add more maple syrup. However the best ratio of cocoa powder to maple syrup for a semi-sweet taste is 1:2 ratio. 1 teaspoon unsweetened cocoa powder to 2 teaspoons of maple syrup.
